lb. bulk turkey Italian sausage

oz. (1/2 cup) shredded reduced-fat Cheddar cheese

(9-oz.) pkg. frozen spinach in a pouch, thawed, squeezed to drain*

cup sliced fresh mushrooms

cup chopped green onions
1
(2-oz.) jar sliced pimientos, drained

eggs

cup half-and-half

oz. (1/2 cup) shredded Swiss cheese

teaspoon paprika

Directions

  1. 1 Heat oven to 350°F. Spray 8-inch square (2-quart) baking dish with nonstick cooking spray. In medium skillet, cook sausage until no longer pink. Drain.
  2. 2 Layer Cheddar cheese, spinach, cooked sausage, mushrooms, onions and pimientos in sprayed baking dish.
  3. 3 In medium bowl, combine eggs and half-and-half; blend well. Pour egg mixture evenly over layered mixture. Sprinkle with Swiss cheese and paprika.**
  4. 4 Bake at 350°F. for 30 to 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.
