Coconut Strawberry Cookies

Red and green holiday colors come together in these chewy treats, flavored fast with gelatin and frosted with easy powdered sugar icing.

Cookies

(3-oz.) pkg. strawberry flavor gelatin

(14-oz.) pkg. (5 1/3 cups) flaked coconut
1
(14-oz.) can sweetened condensed milk (not evaporated)
1/2
teaspoon almond extract

to 6 drops red food color

Frosting

cup powdered sugar

tablespoons butter or margarine, softened

tablespoon milk

to 4 drops green food color
  • 1 In large bowl, combine all cookie ingredients; blend well. Refrigerate 1 hour or until firm enough to handle.
  • 2 Using 1 tablespoon mixture for each cookie, form into strawberry shapes.
  • 3 In small bowl, combine all frosting ingredients; beat until smooth. Using decorating bag and tips, pipe frosting stems and leaves on tops of strawberry cookies.
