Coconut Macaroon Cookies

Ingredients

  • 4 egg whites
  • 2 2/3 cups sweetened flaked coconut
  • 2/3 cup sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon clear vanilla
  • 1/4 teaspoon salt
  • 1/4 to 1/2 teaspoon almond extract

Steps

    Heat oven to 325°F. Spray cookie sheets with cooking spray.

    In large bowl, mix all ingredients, blending well. Onto cookie sheets, drop dough by teaspoonfuls.

    Bake 18 to 20 minutes. Immediately remove from cookie sheets to cooling racks.

  • Use clear vanilla extract to keep the macaroons pearly white.
