Really good and simple, light dessert for ladies luncheon type entertaining. The coconut goes so well with the lemon filling, very tropical tasting. I made my own lemon curd 'cause I like it the best, and it's so easy to do, and also made it really quick by using refrigerated canned (the real cream type) whipped cream; since there is so little of it on each tart, no one would ever notice. And, finally, there were enough little dough scraps left over after cutting to make another "free hand" pastry cup for my husband who was not going to be getting one of the original eight tarts.
