Ingredients

  • 3 egg whites, at room temperature
  • 1/4 cup sugar
  • 1 teaspoon grated lemon peel
  • 1 teaspoon grated orange peel
  • 1/4 teaspoon vanilla
  • 2 cups sweetened flaked coconut

Steps

    Heat oven to 325°F. Line cookie sheet with cooking parchment paper.

    In large bowl, beat egg whites with electric mixer on medium speed until soft peaks form. Fold in sugar, lemon peel, orange peel, vanilla and coconut. Onto cookie sheet, drop mixture by tablespoonfuls 2 inches apart.

    Bake 20 to 25 minutes or until tops are light golden brown and set. Immediately remove from cookie sheet to cooling rack.
