Made this for my bosses, for Bosses Day and everyone at the office loved it! I made it the night before (baking it and preparing it) and just warmed it in the oven an hour before I left and it turned out wonderful. I would say if you prepped it the night before and stuck it in the oven it would be good too. I did use one less egg (5 eggs), just greased the pan with butter instead of pouring the melted butter, used more vanilla and pecans than it called for, used 3/4 cup of syrup before I baked it, and 1/3 after it came out. In my opinion it didn't need to icing at all. LOVED IT

It's quite good with or without the nuts.

It doesn't get much better than this. Caution, you will eat until gone..it's that good! I didn't change a single thing. My family wanted the recipe. I just sent them the link. You have new fans of this website.

Has anyone made this ahead and refrigerated it overnight? Just wondering if it would affect the texture and the baking time.

This has become quiet a hit with my family. It is requested often on weekends! I did follow some of the tips though and reduced the eggs to 5 and the maple syrup to 1/2 cup, this seems to work best for my family. It's nice and moist without being mushy. We have added raisins to it once and a small handfull of mini choc chips another time. Kids loved these variations.
