Cinnamon Coffee Cake

Coffee Cake

cups all-purpose flour

cup sugar

cup buttermilk

cup butter or margarine, melted

teaspoon vanilla

eggs, beaten

Topping

1/4
cup butter or margarine, melted
3
tablespoons sugar
1/2
teaspoon ground cinnamon

  • 1 Heat oven to 350°F. Grease bottom only of 9-inch square pan with shortening or spray bottom with cooking spray. In large bowl, stir coffee cake ingredients with spoon just until dry ingredients are moistened. Spread batter in pan.
  • 2 Bake 30 to 40 minutes or until toothpick inserted in center comes out clean.
  • 3 Generously pierce hot cake with fork. Brush or drizzle 1/4 cup melted butter over hot cake. In small bowl, mix 3 tablespoons sugar and the cinnamon; sprinkle over hot cake. Serve warm.

To substitute for buttermilk, measure 2 1/4 teaspoons vinegar or lemon juice into a 1-cup measuring cup; add enough milk to make 3/4 cup.

Question; How do I adjust this recipe to fit a 9 x 13 pan? I see soooo many mouth watering recipes that call for an 8x8 or 9x9 pan BUT my family is a 9x13 family .... HELP! (Not the best baker in the world so I really need your help in adjusting for a 9x13.)

I poured half the batter in the pan then I spooned a mix of crushed walnuts,brown sugar, little butter then added the rest of the batter. Oh so good. Enjoy Tootsie18

This recipe is awesome. Everyone who eats it, loves it. It is so easy to make. It is also wonderful to gift it. I split the recipe in half, and use a pan half the size to make two.

If you don't have buttermilk try mixing 1/2 cup of milk and 1/4 cup of sour cream it works just as well
