Cider-Glazed Chicken and Sweet Potatoes

cup apple cider or apple juice

cinnamon stick

(17-oz.) can sweet potatoes, drained

apple, sliced

cup pecan pieces

Directions

  1. 1 Heat oil in Dutch oven over medium-high heat until hot. Sprinkle chicken with salt; add to skillet. Cook 4 to 5 minutes or until chicken is browned, turning once.
  2. 2 Pour apple cider over chicken. Add cinnamon and cloves. Bring to a boil. Reduce heat; simmer 5 minutes.
  3. 3 Add sweet potatoes and apple; cover and simmer an additional 10 minutes or until chicken is fork-tender and juices run clear. Remove and discard cinnamon and cloves. Sprinkle with pecans.
