medium onion, chopped (1/2 cup)

small carrots, shredded (1 cup)

tablespoons all-purpose flour

cup half-and-half

jar (26 oz) Muir Glen® chunky tomato pasta sauce

can (14.5 oz) Muir Glen® diced tomatoes, undrained
1/4
cup chopped fresh basil leaves

  • 1 In 3-quart saucepan, heat butter over medium-high heat. Add onion and carrots; cook and stir 3 to 4 minutes or until softened. Add flour; cook and stir until moistened. Gradually add half-and-half, cooking and stirring about 2 minutes or until smooth.
  • 2 Stir in remaining ingredients. Cover; cook over medium heat about 15 minutes, stirring frequently, just until mixture comes to a boil.
  • 3 If desired, top with additional chopped fresh basil leaves.

You can use any type of tomato pasta sauce; chunky sauce with vegetables adds texture to this easy soup.

Fresh chopped parsley can be used in place of fresh basil.

This was so easy to make and very tasty. It was great on a cold winter night and even my kids liked it.

If low salt is a concern (mine also) use fresh tomatoes or no-salt canned tomatoes, sweet butter, and try Classico Pasta Sauce. It has one of the lowest sodium amounts and I think has a very nice taste. Most of the pasta sauces have at least 600 mg+ sodium content--some over 1000! I don't know what your preference is, but there are some low sodium ones that aren't too bad.

Also very good if you use unsweetened coconut milk instead of half-and-half - omit the flour. (Bobby Flay used coconut milk in a hot cocoa recipe ...)

How can this be made for a low sodium restricted diet? This is one of my favorite soups, but ingredients have way way to much salt for me.
