can (19 oz) Progresso® Vegetable Classics tomato rotini soup

can (14.5 oz) Muir Glen® organic diced tomatoes with Italian herbs, undrained

slices Canadian bacon, chopped
1/2
cup croutons
1/4
cup shredded mozzarella cheese (1 oz)

  • 1 In 2-quart saucepan, mix soup, tomatoes and Canadian bacon.
  • 2 Heat to boiling. Reduce heat to low; simmer uncovered 5 minutes.
  • 3 Divide croutons evenly among 3 bowls. Pour soup over croutons. Sprinkle each serving with 1 heaping tablespoonful cheese.

I feel sad that a soup would be listed with 220 calories per 1 1/4 cup , who eats that amount without still being hungry ? The real shock is sodium listed 1410. We can do better when feeding our families.

We had this for dinner the other day, it was very good. I serve it will garlic bread. I guesses because I love a certain places garlic dipping sauce for their pizza.

My 4 1/2 year-old granddaughter, Hope, loves to help me in the kitchen. Most girls that age do, I guess. When I told her we were going to make "pizza soup," she was amazed. It seemed she was trying to vision a pizza as a soup, or vice versa. The cooking lesson was a success, and she enjoyed eating the soup. She took a copy of the recipe home with her so she and Mommy can make it!
