Ingredients

  • 1 lb. ground beef or ground turkey
  • 1/2 cup chopped onion
  • 1 (1 1/4-oz.) pkg. taco seasoning mix
  • 1 1/2 cups water
  • 1 1/2 cups thinly sliced zucchini
  • 1 cup frozen whole kernel corn
  • 1 (14 1/2-oz.) can stewed tomatoes, undrained
  • 1 1/2 cups uncooked instant rice
  • 4 oz. (1 cup) shredded Cheddar cheese

    In large skillet, brown ground beef and onion until beef is thoroughly cooked. Drain. Stir in seasoning mix, water, zucchini, corn and tomatoes. Bring to a boil. Stir in rice. Reduce heat to low; cover and simmer 5 to 7 minutes or until liquid is absorbed, stirring occasionally.

    Remove from heat. Fluff mixture with fork; sprinkle with cheese. Cover; let stand 3 minutes or until cheese is melted. If desired, garnish with diced red bell pepper and jalapeño chiles.
