Chorizo and Egg Breakfast Burritos

Ingredients

  • 1/4 lb. bulk chorizo sausage
  • 1/2 cup frozen southern-style hash-brown potatoes (from 32-oz. pkg.)
  • 1/4 cup sliced green onions
  • 3 eggs, beaten
  • 2 (8-inch) flour tortillas, heated
  • 1 oz. (1/4 cup) finely shredded taco-flavored cheese blend or Cheddar cheese

    Spray medium skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add sausage and potatoes; cook 8 to 10 minutes or until sausage is no longer pink, stirring frequently. Remove from skillet; cover to keep warm.

    Reduce heat to medium. Add onions and eggs to same skillet; cook 3 to 5 minutes or until eggs are firm but still moist, stirring frequently. Remove from heat.

    Spoon sausage mixture down center of each warm tortilla. Top each with egg mixture. Sprinkle each with cheese. Fold bottom of each tortilla up over filling; roll up. If desired, serve with salsa.

  • Popular in Mexican and Spanish cuisines, chorizo is a coarse pork sausage that's generously seasoned with garlic and chili powder. Mexican chorizo is made with fresh pork, while Spanish chorizo is made with smoked pork. Smoked pork chorizo can be used in this chorizo breakfast burrito recipe, if desired. Simply cook the potatoes alone for a few minutes, then add the sausage and continue cooking just until thoroughly heated, another 2 to 3 minutes.
  • Refrigerated hash-brown potatoes can be used in place of the frozen variety.
  • Bell pepper can be used in place of the green onions in these chorizo burritos.
