Chopped Garden Salad with Curry-Tarragon Dressing

Ingredients

Dressing

  • 1/2 cup nonfat cottage cheese
  • 1/4 cup water
  • 2 tablespoons fat-free mayonnaise or salad dressing
  • 1 tablespoon honey
  • 1/2 teaspoon curry powder
  • 1 teaspoon finely chopped fresh tarragon

Salad

  • 3 cups chopped mixed lettuce (iceberg, Bibb and/or romaine)
  • 1 cup chopped green cabbage
  • 1/3 cup golden raisins
  • 1/3 cup diced carrot
  • 1/3 cup thinly sliced radishes
  • 1 small tart apple, chopped

    In blender container, combine all dressing ingredients except tarragon; blend until smooth. Stir in tarragon.

    In large salad bowl, combine all salad ingredients. Pour dressing over salad; toss gently to coat.
