Chocolate-Covered Cherry Cookies

cup butter, softened

egg yolk

cup unsweetened baking cocoa

Filling

cup butter, softened
1
tablespoon brandy or 1/2 teaspoon brandy extract
1
cup powdered sugar

Topping

maraschino cherries with stems, drained on paper towels
1/2
cup semisweet chocolate chips
1
teaspoon oil

  • 1 Heat oven to 375°F. In large bowl, beat 1/2 cup sugar, 3/4 cup butter, the vanilla and egg yolk until light and fluffy. Add flour and cocoa; beat until well combined.
  • 2 Shape rounded teaspoonfuls of dough into 1-inch balls; place 1 inch apart on ungreased cookie sheets. With index finger, make indentation in center of each cookie.
  • 3 Bake 7 to 9 minutes or until set. Immediately remove from cookie sheets. Cool completely, about 10 minutes.
  • 4 Meanwhile, in medium bowl, beat all filling ingredients until smooth. Spoon about 1/2 teaspoon filling into center of each cooled cookie. Press cherry into filling.
  • 5 In small saucepan, melt chocolate chips with oil over low heat, stirring constantly. Spoon or drizzle melted chocolate over cherry on each cookie. Let stand until chocolate is set.

Easy way to make the chocolate drizzle: place the chocolate chips in a small freezer bag with a tsp of shortening instead of oil. Microwave in 30sec intervals, pulling out the bag and squishing the bag to mix the melting chocolate until chocolate is well melted. Clip a tiny tip from bottom corner of bag and squeeze the bag to easily drizzle chocolate with no cleanup!

I made these last year at Christmas and my daughter requested they become a family tradition. They are really good.

my favorite cookie recipe since I first made it from a Christmas cookie book.. If you over work the dough, it will make the cookies dry. The chocolate must be used right away. If you let it cool, it won't drizzle.

In 2001 I got the cookbook that had this cookie in it, and have made it every year since. Everyone loves it. I do use the cherries without the stems, makes it easier to eat. It is one of my fav. cookies for Christmas.

This was a really easy cookie to make. I made two fillings, one with Cherry Brandy and the other with Almond Extract. They both were delicious. The actual cookie is a bit dry, but that may be my fault, I may have baked it too long. The melted chocolate doesn't drizzle either, I had to add more oil just to get it to drop off the end of the spoon. The overall cookie once eaten is tasty.
