Chocolate Chip-Zucchini Cake

Ingredients

cups sugar

cup butter or margarine, softened

cup vegetable oil

teaspoon vanilla

cups all-purpose flour

cup unsweetened baking cocoa

teaspoon baking soda

cup buttermilk

cups shredded zucchini (1 medium)

to 1 cup semisweet chocolate chips (3 to 6 oz)

cup chopped nuts, if desired

Directions

  1. 1 Heat oven to 350°F. Grease 13x9-inch pan with shortening or cooking spray; lightly flour. In large bowl, beat sugar, butter, oil, vanilla and eggs with spoon until well blended.
  2. 2 Stir in flour, cocoa, baking soda and buttermilk until well combined. Fold in zucchini, chocolate chips and, if desired, nuts. Spread batter evenly in pan.
  3. 3 Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. If desired, frost cooled cake.
