Ingredients

large onion, chopped (1 cup)

garlic cloves, minced

(15-oz.) cans black beans, drained, rinsed

(28-oz.) can whole tomatoes, undrained, cut up

(14.5-oz.) can diced tomatoes, undrained

chipotle chiles in adobo sauce (from 7 or 11-oz. can), finely chopped

teaspoons dried oregano leaves

teaspoon cumin

Directions

  1. 1 Spray nonstick Dutch oven with nonstick cooking spray. Heat over medium heat until hot. Add onion and garlic; cover and cook 4 minutes, stirring occasionally.
  2. 2 Add all remaining ingredients; mix well. Bring to a boil. Reduce heat; cover and simmer 8 to 10 minutes to blend flavors, stirring occasionally.
