cups frozen bell pepper and onion stir-fry

(11-oz.) can Green Giant® SteamCrisp® Niblets® Whole Kernel Sweet Corn

(1-oz.) pkg. Old El Paso® Taco Seasoning Mix
1/4
cup water

(16-oz.) can Old El Paso® Refried Beans
1/2
cup taco sauce
2
cups chili-cheese corn chips
4
oz. (1 cup) shredded Cheddar cheese

  • 1 Heat oven to 375ºF. Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray. Brown ground beef in large skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain.
  • 2 Add bell pepper and onion stir-fry, corn, taco seasoning mix and water; mix well. Cook over medium-high heat for 5 to 6 minutes or until liquid is absorbed, stirring occasionally.
  • 3 Meanwhile, in small bowl, combine refried beans and taco sauce; mix well.
  • 4 Spoon half of beef mixture into sprayed baking dish. Top with half of bean mixture and half of the corn chips. Top with remaining beef mixture and bean mixture. Cover with foil. Bake at 375ºF. for 30 minutes.
  • 5 Remove from oven. Uncover baking dish; top with remaining half of chips. Sprinkle with cheese.
  • 6 Return to oven; bake, uncovered, an additional 10 to 12 minutes or until thoroughly heated and cheese is melted. If desired, garnish with chopped fresh cilantro.

For cbeaver81 if you have a Kroger in your town they sell the pepper and onions in their freezer section. I believe you can also find them in Walmart.

Love this recipe. My only complaint is that I have never been able to find the frozen bell pepper and onion stir fry at any grocery store. I end up using fresh onion and green pepper as a substitute.

I took this dish to a potluck at work. It was devoured! Easy & delicious.

I made this last night. It was so easy and the whole family liked it. I was not able to find a bell pepper and onion stir fry, so I just used fresh grn. pepper and onion. I added the fresh vegies to the pan while the grd. beef was browning. I was great and I will make it again.

I made a lower calorie lower fat version by using Boca crumbles for the ground beef, only 8.5 oz can of corn, fat free cheddar cheese, fat free refried beans, and salsa instead of taco sauce. I also added extra onions and peppers and used 2 ounces of crumbled Fritos instead of 2 cups. It was delicious! I will definately make again!
