lb lean (at least 80%) ground beef

cup coarsely chopped onion (2 medium)

package (1.25 oz) chili seasoning mix

can (15.5 oz) red beans, drained

can (8 oz) tomato sauce

bags (1 1/4 oz each) corn chips

Toppings

cups shredded cheese (6 oz)

cups shredded lettuce

cup sour cream, if desired

  • 1 In nonstick 4-quart Dutch oven, cook ground beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain. Stir in chili seasoning mix, beans and tomato sauce. Reduce heat to low; cover and cook 10 minutes, stirring occasionally, until thoroughly heated.
  • 2 Let guests serve themselves by opening 1 bag of corn chips and topping with generous 1/3 cup beef mixture, some cheese, lettuce and sour cream.

At our high school we call these "Walking Tacos." They are a great lunchtime fundraiser!
