medium onion, coarsely chopped

(1 inch) piece gingerroot, peeled and chopped

lb boneless skinless chicken breasts, cut into 1-inch pieces

to 3 tablespoons curry powder

pouch (9 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce

cup whole milk plain yogurt

oz cooked basmati rice

  • 1 In 12-inch nonstick skillet, heat oil over medium-high heat. Cook onion and gingerroot in oil 4 minutes, stirring frequently. Add chicken. Cook 4 to 6 minutes or until chicken is no longer pink. Stir in curry powder; cook 30 seconds. Add cooking sauce; cover and simmer 8 minutes.
  • 2 Remove from heat. Slowly stir in yogurt. Add salt and pepper to taste, if desired.
  • 3 Serve with rice.
