Chicken Tagine

Enjoy this chicken tagine that’s made using apricots and Progresso® broth – a tasty slow cooked dinner.

Ingredients

lb chicken thighs

teaspoon salt
1/2 teaspoon pepper

tablespoon olive oil
1
container (8 oz) refrigerated prechopped onion
1
cup dried apricots
1/2 cup golden raisins
2
cinnamon sticks
1
3/4 cups Progresso® chicken broth (from 32-oz carton)
1/4 cup honey
1/2 teaspoon ground turmeric
Hot cooked couscous, if desired
Chopped fresh cilantro, if desired
Slivered almonds, if desired
  • 1 Spray 4- to 5-quart slow cooker with cooking spray. Sprinkle chicken with 1/2 teaspoon of the salt and the pepper. In 12-inch skillet, heat oil over medium-high heat. Cook half of the chicken in oil 6 minutes, turning once, until browned. Place in slow cooker. Repeat with remaining chicken.
  • 2 Add onion, apricots, raisins and cinnamon sticks to slow cooker. In medium bowl, mix broth, honey, turmeric and remaining 1/2 teaspoon salt with wire whisk until blended. Pour into slow cooker.
  • 3 Cover; cook on Low heat setting 7 to 8 hours or until chicken is tender. Remove cinnamon sticks. Serve chicken mixture over couscous. Garnish individual servings with cilantro and almonds.
