Chicken Roll Ups

Fresh bell peppers, tomatoes and onion enhance the flavor of the chicken. Very easy to prepare when time is limited. Have not met one child who does not like this meal!

Ingredients

3-4
boneless skinless chicken breasts
2
medium bell peppers
1
large onion
2
large fresh tomatos
1
can cream of chicken soup
1
can of milk
1
large bag of shredded sharp cheese
1
can of Pillsbury crescent rolls

Directions

  • 1 Spray frying pan with Pam original or butter flavor. I use Mortons Nature Seasoning to season my chicken. Turn up on high just to sear each side of the chicken. Slice up bell pepper, onion and tomatoes. After the chicken has browned on both sides, turn down heat to medium low. Add your sliced vegetables and cover the frying pan. Cook chicken until done.
  • 2 Pour soup into a bowl. Take can and fill with milk. Gradually add to soup stirring until smooth. Set aside.
  • 3 Remove chicken from pan and shred up. Mix your vegetable mixture and juices from pan. Open crescent rolls (will make 8)take chicken and stuff starting with the wide end and roll up to point. Place in glass baking dish. Pour soup mixture over the top of cresent rolls and top with shredded sharp cheese. Bake according to directions on cresent rolls. Serve with green vegetables or salad.
