It was so good. And easy. I did not even peel the eggplant. Just cut veggies all up in big chunky pieces. Was done in 8 hours. Would not have wanted veggies any softer.

I don't know why people are giving this 2 stars. Though, I added a lot of thyme to this and salt and pepper, and 10 minutes before I stopped cooking it I added 1/2 cup of white wine. I loved it.
