Expert Tips

Queso is the Spanish word for cheese. A quesadilla is the Mexican equivalent of a grilled cheese sandwich--cheese melted between two tortillas.

To reduce the fat by 10 grams per serving and the calories by 100, coat the pan with nonstick cooking spray instead f buttering the tortillas and top the quesadilla with nonfat sour cream instead of regular sour cream.
