Ingredients

24: (1/2-inch-thick) slices baguette-style or small French bread

2: tablespoons olive oil

3/4: cup chunky pizza sauce

1/2: lb. thinly sliced cooked chicken, cut into 24 pieces

2: oz. (1/2 cup) shredded mozzarella cheese

2: to 4 tablespoons chopped fresh parsley

Directions

1 Heat oven to 350°F. Brush bread slices with oil; place on ungreased cookie sheet. Bake at 350°F. for 8 to 10 minutes or until crisp.
2 Remove cookie sheet from oven. Top each bread slice with pizza sauce, chicken, cheese and parsley.
3 Return to oven; bake an additional 5 to 8 minutes or until topping is hot and cheese is melted.

Purchase preshredded mozzarella for easiest preparation of this French-bread pizza. For the most tender topping, however, buy fresh mozzarella, available at some deli counters and gourmet or specialty Italian markets, and cut it into thin slices.
