Chicken-Pesto Hoagies

Ingredients

  • 1/3 cup purchased pesto
  • 1/4 cup mayonnaise
  • 4 (6 to 7-inch) hoagie buns
  • 8 oz. sliced cooked chicken
  • 4 (1 1/2-oz.) slices mozzarella cheese, halved lengthwise
  • 1 red bell pepper, cut into rings
  • 1 cup alfalfa sprouts

    In small bowl, combine pesto and mayonnaise; mix well. Spread on cut sides of hoagie buns.

    Layer chicken, cheese, bell pepper rings and sprouts on bottom halves of buns. Cover with top halves of buns.

  • Pesto is an uncooked sauce originating in Genoa, Italy. Fresh basil, Parmesan cheese, garlic, pine nuts and olive oil are blended together to make pesto. Look for pesto in the refrigerated case near the fresh pasta.
  • To save about 11 grams of fat and about 90 calories per sandwich, use fat-free mayonnaise.
  • These sandwiches are great for a picnic. Wrap them tightly in foil or plastic wrap and keep them very cold until serving time.
