Looking for a cheesy Italian dinner using Progresso® Bread Crumbs? Then check out this great chicken parmigiana that's served over pasta.

oz. uncooked fettuccine

cup Progresso™ Italian Style or Garlic Herb Bread Crumbs

tablespoons grated Parmesan cheese
1
teaspoon dried basil or thyme leaves, if desired

tablespoon butter, melted

boneless skinless chicken breast halves

tablespoons olive oil

(14-oz.) jar marinara sauce
1/2
cup water
1
oz. (1/4 cup) shredded mozzarella cheese

Steps

  • 1 Cook fettuccine to desired doneness as directed on package. Drain
  • 2 Meanwhile, in small bowl, combine bread crumbs, Parmesan cheese, basil and butter. In another small bowl, beat egg with fork. Dip chicken in egg, then into bread crumb mixture, coating evenly.
  • 3 Heat oil in large skillet over medium heat until hot. Add coated chicken. Cook 5 to 7 minutes or until golden brown, turning once.
  • 4 Add marinara sauce and water to skillet. Bring to a boil over medium heat. Reduce heat to low. Cook 12 to 15 minutes or until chicken is no longer pink; stirring occasionally.
  • 5 Sprinkle each piece of chicken with 1 tablespoon mozzarella cheese. Cover; cook 2 to 3 minutes or until cheese is melted. Serve over fettuccine.
