Didn't like this at all. Manicotti should have been cooked prior to stuffing. They were actually dry and brittle in spots. Very disappointed and wouldn't make this again.

I was hoping that this would be a lot better. Followed it exactly, with no changes and was VERY disappointed. Manicotti didn't cook completely and was actually brittle in spots. Would not make this again.

I changed it up a bit and made it into stuffed shells. I feel that they are easier to fill and speeds up the prep time.

Yummy, but Mexican ravioli doesn't involve stuffing manicotti. :-)

It was pretty good. I think I needed a little more leftover salsa to put on top of it and probably in it. I think it''s a recipe worth keeping. My husband doesn''t like black beans and he liked this recipe.
