Ingredients

  • 4 (7-inch) Greek-style pita flat breads (from 12.5-oz. pkg.)
  • 1/2 cup mayonnaise
  • 2 garlic cloves, minced
  • 2 teaspoons dried Greek seasoning
  • 4 boneless skinless chicken breast halves
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomato

    Heat grill. Wrap pita flat breads in foil; set aside. In small bowl, combine mayonnaise and garlic; blend well. Refrigerate until serving time. Sprinkle Greek seasoning over chicken breast halves.

    When ready to grill, place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 12 to 15 minutes or until chicken is fork-tender and juices run clear, turning once.

    During last 5 minutes of cooking time, place flat bread packet on grill; heat until flat breads are warm, turning foil packet once.

    To serve, spread warm flat breads with mayonnaise mixture. Thinly slice chicken. Layer each flat bread with chicken, cucumber and tomato; roll up. If desired, secure with toothpicks.

    To broil chicken, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning once. During last 5 minutes of cooking time, place flat bread packet on broiler pan to heat, turning once.

    Pita flat bread is wrapped or folded around fillings, while pita pocket bread is cut in half and stuffed with fillings. Both types of pita bread are stocked together in the grocery store, so be sure to select pita flat bread.

    Substituting light mayonnaise for the regular mayonnaise will reduce the fat by about 13 grams per serving.
  • tip 4
    Sprinkle feta cheese and pitted kalamata olives over the filling before folding up the pita bread.
