I have had weight loss surgery and can not have soft tortillas. This is a GREAT way to get the taste of the enchiladas without having to worry about the tortillas agreeing with my surgery. LOVE THIS RECIPE!!

I made this a few days after having our 3rd child. First time making it...super easy and ubelievably good!!! Our kids asked for seconds and my husband was thrilled with leftovers for the next day!! Thanks for another great recipe!

I fixed this last night and it was great. My husband would of prefered more meat. I used Pillsbury Pizza roll instead of pie crust because that was what I had on hand. I also used diced left over grilled chicken instead of canned chicken. Because the pizza crust was more oblong in shape I used a 9" square pyrex casserole dish. I also sauteed about 1/2 cup diced red bell pepper and 1/2 cup diced onion and added to the mixture. I was concerned during the preparation that it was too thin; and it did not look appetizing to me. I thought that I had wasted my ingredients. But it turned out great. We enjoyed it and I'll fix it again. Next time though; I'll add more chicken.

My daughter made this tonight for dinner. We didn't have any of the Ready Crusts so she used the ones from the freezer case (already in the tins). This made enough for two quiches, which is a good thing since one of them is already gone. We might use more cheese next time but even if you use the stated amount, it's very good. You could vary it by adding finely chopped onions and/or green peppers. It's definitely one we'll make over and over again. She's taking one to a potluck at work this week. It would be good hot or at room temperature.

This is just delicious. I hate quiches because I can''t stand the taste of egg, but you''d never know it was in this. My husband made it, added an extra cup of cheddar, and we had so much mixture we ended up making two quiches instead of one. We refrigerated one and ate it a couple days later. I really do recommend this. Very easy.

Easy, delicious and different. I''ve served this dish to company at several brunches and it always gets rave reviews from everyone (also evidenced by the number of second helpings). It''s also a great, quick supper as I usually have all of the ingredients on hand.

this was really good. although i really didnt like the pie crust too much. i think i would use a frozen one instead.
