Ingredients

DRESSING

cup apricot preserves (chop large pieces)

cup lime juice

SALAD

cups cubed cooked chicken

medium red or green bell pepper, chopped

cups frozen whole kernel corn, thawed

(15-oz.) can black beans, drained, rinsed

to 6 leaves Boston lettuce

Directions

  1. 1 In small bowl, combine all dressing ingredients; blend well.
  2. 2 In large bowl, combine all salad ingredients except lettuce. Add dressing; blend well. Arrange lettuce on 5 individual plates. Spoon salad over lettuce.
