Chicken, Corn and Black Bean Salad

Ingredients

DRESSING

cup apricot preserves (chop large pieces)

SALAD

cups cubed cooked chicken

medium red or green bell pepper, chopped

cups frozen whole kernel corn, thawed

(15-oz.) can black beans, drained, rinsed

  • 1 In small bowl, combine all dressing ingredients; blend well.
  • 2 In large bowl, combine all salad ingredients except lettuce. Add dressing; blend well. Arrange lettuce on 5 individual plates. Spoon salad over lettuce.
