Expert Tips

The cucumber relish, made tangy with vinegar, also makes a fine accompaniment for grilled steak or fish.

Ground chicken, an increasingly popular alternative to ground beef, is as versatile as hamburger but less fatty, and its mild flavor makes it a good foil for a wide range of seasonings. Ground chicken breast is even leaner. It has 3 grams of fat per 3 ounces cooked, compared to about 7.5 grams for ground chicken and 15 grams for 80% lean ground beef.
