Hearty chicken burgers served with cucumber relish- dinner that's ready in just 35 minutes!

RELISH

medium cucumber, seeded, shredded

cup chopped red or green bell pepper

tablespoons finely chopped onion

tablespoons mayonnaise or salad dressing

tablespoon vinegar

teaspoon chopped fresh dill weed or 1/4 teaspoon dried dill weed

BURGERS

1
lb. ground chicken
1/4
cup Italian style bread crumbs
2
tablespoons nonfat plain yogurt
2
teaspoons prepared horseradish
6
burger buns, split
6
leaves lettuce

Steps

  • 1 <b>GRILL DIRECTIONS:</b> In small bowl, combine all relish ingredients. Cover; refrigerate while preparing burgers.
  • 2 Heat grill. In large bowl, combine ground chicken, bread crumbs, yogurt and horseradish; mix well. Shape mixture into 6 patties. When ready to grill, place patties on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 12 minutes or until no longer pink in center, turning once.
  • 3 Toast burger buns on grill, cut side down, during last few minutes of cooking time. Place lettuce leaf on bottom half of each bun; top each with burger, relish and top half of bun.

The cucumber relish, made tangy with vinegar, also makes a fine accompaniment for grilled steak or fish.
