Ingredients

boneless, skinless chicken breast halves, cut into thin strips

(15-oz.) can black beans, drained, rinsed

tablespoons water

teaspoon cumin

garlic clove, minced

to 3 drops hot pepper sauce

(8- to 10-inch) flour tortillas

leaves lettuce

small tomato, seeded, chopped

cup sliced green onions

tablespoons chopped fresh cilantro

Directions

  1. 1 Heat oven to 350°F. Heat oil in large skillet over medium-high heat until hot. Add chicken; cook and stir 5 minutes or until chicken is no longer pink. Remove from skillet; cover to keep warm.
  2. 2 In same skillet, combine beans, water, cumin, garlic and hot pepper sauce; mix well. Cook over medium-high heat until thoroughly heated, stirring occasionally and mashing beans slightly.
  3. 3 Meanwhile, wrap tortillas in foil. Bake at 350°F. for 10 minutes or until warm.
  4. 4 Place 1 lettuce leaf on each warm tortilla; spoon about 2 tablespoons bean mixture down center of each. Top each with 1/3 cup cooked chicken; sprinkle with tomato, onions and cilantro. Fold sides of each tortilla over filling, overlapping to form triangle.
