slices bacon, cut into 1/2-inch pieces

boneless, skinless chicken breast halves, cut into 1-inch pieces

boneless, skinless chicken thighs, cut into 1-inch pieces

cup chopped onions

cup chopped green bell pepper

cup thick and chunky salsa
1/2
teaspoon dried thyme leaves

(16-oz.) can baked beans, undrained

(15.5-oz.) can dark red kidney beans, drained

(15.5-oz.) can great northern beans, drained

  • 1 In large skillet or Dutch oven, cook bacon over medium heat until crisp. Drain, reserving 3 tablespoons drippings in skillet. Add chicken, onions and bell pepper; cook and stir until chicken is browned.

To reduce the fat to 8 grams per serving, cook the bacon in the microwave, sandwiched between sheets of microwave-safe paper towels. Instead of browning the chicken and vegetables in the bacon drippings, coat the pan with nonstick cooking spray.

The flavors in the hearty one-dish meal will blend aas they sit. Make the recipe up to two days before serving and refrigerate it until needed. Reheat over low heat.
