(3-oz.) pkg. cream cheese, softened

tablespoons mayonnaise or salad dressing

cup chopped cooked chicken
1/4 cup chopped onion

oz. (1/2 cup) shredded Cheddar cheese

(11-oz.) can Green Giant® SteamCrisp® Mexicorn® Whole Kernel Corn, Red and Green Peppers, drained

(1 lb. 1.3-oz.) can Pillsbury® Grands!® Refrigerated Flaky Biscuits

  • 1 Heat oven to 375°F. Lightly grease 8 muffin cups. In medium bowl, blend cream cheese and mayonnaise until smooth. Stir in chicken, onion, cheese and corn.
  • 2 Separate dough into 8 biscuits. Separate each biscuit into 2 parts by removing the top 1/3 of each biscuit. Place bottom 2/3 piece of each biscuit in greased muffin cup; firmly press in bottom and up sides, forming 1/4-inch rim. Spoon about 1/3 cup chicken mixture into each cup. Top each with remaining 1/3 biscuit, stretching slightly to fit. Press edges to seal. Sprinkle with sesame seed.
  • 3 Bake at 375°F. for 15 to 20 minutes or until golden brown.

This recipe for "Chick 'N Corn Mini Pies", are a decided hit for a male child and his friends. Grandpa and Grandma both really enjoyed them as an easy meal to make a double batch of [Enough for plenty of servings]. The whole family enjoyed them for an evening meal when the outside became warm enough to enjoy using the picnic tables for a favorite dinner! Enjoy! :-)

I have made these little pies for a few years now and it's always a favorite. Easy to make and delicious to boot!!

I grew up with this recipe and my daughter now has added her own twist! She prepares the filling and bakes it in a casserole dish then serves it as an appetizer with tostitos or small sandwich bread

I love this recipe, as does my family. The second and third times I made it, I tweaked it a bit by using some lighter ingredients. It does not make it a low fat recipe, but its a little lighter. And its still is a hit! My father, when I shared it with him, called me with a very simple request: "Make More." :) Substituted ingredients: I couldn't dind the reduced fat Grands in my local supermarket, but the ones I used for the last batch were homestyle butter.... Each time I make these they seem to get even better reviews! Instead of Mayo, I use low fat or reduced fat ranch dressing Shredded cheese ... shredded mexican cheese w/2% milk Cream Cheese ... 1/3 less fat cream cheese (couldn't find the smaller packages anymore, so I just used approx 1/3 of the 8oz brick) Enjoy!
