These mini pies were really good and very easy to make just 1-2-3.... I love that!!!
I used a Lite Cherry Pie filling and everyone love them! :-)

These little pies are great! If you have a tart tamper, it makes fitting the dough into the muffin tin much easier. It's a wooden dowel with a larger "knob" on one end for regular size tins and a smaller "knob" on the other for mini muffin tins. About $4.

I tried making these in the mini muffin pans and what a disaster. The cups turn out to be too small with trying to put cream cheese filling that someone else suggested. They still tasted OK but they ran all over the place. Must try again in regular muffin tins. Plus works better if you put the cherry filling on after you bake the cups

I have made these several times and they are great. I serve them for company and they think you have worked hard to prepare. I serve warm with a dip of ice cream and a sprinkle of nuts on top.

Super idea except for discarding the scraps. Be sure to roll out in strips, however small, or cut out what remains and sprinkle with cinnamon sugar.

Made these yesterday for a 4th of July party at the lake. They were a hit. I used the leftover pie crust and cut out little heart shapes and placed on top. They were so cute. I also had Redi Whip available for people to add if they wanted to. Will definitely make again.

So delicious !!!.... Made these for the 4th of July , everyone loved them !!.. They were a BIG hit...
I used strawberry/ raspberry pie filling.. And I made a mixture of chopped walnuts with brown sugar and white sugar, sprinkled the mixture on top of pie filling before baking .... They were sensational....

I made these today and they tasted good. But my pie dough fell apart when I took them out of the muffin tin. Not sure what I can do to prevent this.

I used 1/2 a pack of cream cheese and mixed it with 1/2 c. powdered sugar, 1 tsp. milk 1/2 tsp vanilla, 1/2 c. cool whip, mix together with a mixer. If too stiff add some more milk until it get workable. Put it on the bottom of the mini pies and cherry on top and you have a cheezy cherry pie.
you can add the leftover scraps on top to create a laced cover for pie. Enjoy. Love cool whip on top before serving!

If you make a double batch for a party, use a can of blueberry pie filling and a can of cherry. Before serving, squirt a dollop of whipped cream on each and the presentation looks very patriotic.
