This soup is a hit with our family. There aren't any left overs, next time I am going to double it and try using the frozen southern hashbrowns to save on time. I can't wait to make it again this weekend!!

So, I saw this recipe and said "soup, I'm gonna make you NOW'!!
Oops, no ½ & ½. oh well, whole milk will have to do.
Darn, no shredded cheddar, well, here's a block of pepper jack that shredded to the right amount.
So I made it, and we ate it, and it was WONDERFUL!
Just right with some hot rolls and a crunchy salad!

I will definitely try this. I will however use low sodium broth, and fat free half and half to cut the sodium and fat content. I'm sure it will taste just as good as the original recipe :)

To PJCRAC73, you could also adjust this recipe to suit your dietary needs. I do it all the time and it works just fine. Don't knock it before you try adjusting it :)
