Whenever I make potato soup I cusinart some carrotts to add and use evopated milk instead of half and half as it is cheaper, might not be as flavorable but less expensive. likesanimals

Instead of adding milk and flour, mash up some of the potatoes as a thickener.

For the person who wanted to use water instead of broth. I think you should reconsider and use veggie broth if you are avoiding chicken. This is a fairly bland recipe and it really needs that kick that the broth offers. Also try adding some frozen broccoli florets and carrot shreds to the mixture. It is delicious!

I'm seeing several people ask how to make this without a slow cooker. Cook your bacon as directed, just use a 4 to 5 quart pot. Then cook your onions in it add the rest of your ingredients except milk, flour and cheese. Bring to a boil then simmer until the potatoes are fork tender. Mix your milk and flour. Add to the soup, then mix in the cheese. Top with bacon. I made this soup and had the same reactions that some were having about it being bland. I added 1 T minced garlic when I cooked the onions and 1 1/2 tsp Italian seasoning when I put in the salt and pepper. Very good.

We had somethin like this at a place I worked we topped it with bacon cheese and chives also sour cream as garnish I love it

I have made a similar potato soup on the stove top and not in a crock pot. To add flavor add a 1/4 c. of butter. It makes for richer soup.

I made this soup this past weekend and only had one bowl left over...it was a hit with my family!!! I'm already being asked to make it again! I used a whole box of chicken broth since there was only a little left in there anyways. I didn't use the bacon either simply cause I didn't have any thawed out. However we had some christmas ham still in the fridge and cut that up and added it in right at the end and it was amazing with or without the ham! This recipe is for sure a keeper!

I have a similar receipe but it calls for green pepper, 1 japelano pepper and caynee pepper at the end. However is is spicy cheesburger soup as you brown a pound of ground beef, drain and ad the peppers really add the flavor
