Cheesy Potato Soup

A meal that can be made in stages. Cook the bacon and prep the vegetables in the AM. Simmer the broth and veggies in the afternoon, and bring it all together with the cheese and cream just before dinner. I like to cook it on the stove so I can stir and check on the vegetables. Like others I do give a gentle mash to the potatoes before adding the cream. I use low sodium bacon and broth. Add a good hunk of sour dough bread and you have a delicious meal.

I made this today and it came out amazing. It is really thick and filling. No need to have anything else with it. I used more potatoes that required and mashed them a little to thicken it up and it was perfect. Will be making it again this weekend!!

Just made this today. I used the reduced sodium broth, fat free half and half and reduced fat cheese and turkey bacon. I garnished with the bacon and green onion. It was fabulous and easy. Will definitely make again!

I absolutely loved this soup. I would cook it a little extra next time or make my potatoes a little smaller as after 7 hours i would have liked them a little more mushy in the soup. That being said, that was more my fault then the recipes, i think like vicki109 said i think it would be good to maybe mush a few potatoes up at the end to give it that texture it was missing. but the flavor was out of this world. i made homemade bread with it and my husband when i told him what we were having for supper was like oh ok i guess. then he kept saying how good the house smelt all day. and he always rat

I will be making this on Sunday. It sounds wonderful, but I have to admit I will be making a few adjustments such as I'll use celery powder cuz I don't like celery stalks, I also will be making homemade broth from chicken I've always made my own 'cuz of sodium. I also like to add other seasonings I like a little kick to my food. LOL. I know I'm gonna love this recipe.

LOve this soup. Add thinly sliced carrots. I like to squish up half of the potatoes at the end, helps to thicken it.. Even better the next day!

This is a great soup. My daughter liked it and she is the fussiest eater there is. The only change I would make is add more bacon, cooking it in the soup for the last half hour.

I made this soup over the weekend and my husband and I both loved it. Didn't take long to prep and was a delicious meal on a cold night.

This was the first soup I ever made and I thought it turned out great. My kids and husband both loved it.
