Ingredients

4-6: bone in or out pork chops - your preference

6-8: potatoes, russett or yukon gold work best

1: can cream of chicken soup + 1/2 can of water

1/2: loaf of Velveeta cheese

: salt & pepper to taste

Directions

1 season pork chops with salt & pepper then lightly brown on both sides in a skillet.
2 Cut potatoes up into fairly large chunks and boil until almost fork tender.
3 Slice up 1/2 of the loaf of Velveeta cheese whiled microwaving the soup with the 1/2 can of water.
4 Put pork chops in a 9x10 baking dish, then layer the boiled potatoes and slices of cheese on top.
5 Finish by pouring the soup evenly over the entire casserole and bake on 375 for 30 minutes.

This is a great recipe. Next time I make it I'll add more potaoes.

This was a very good recipe: I used boneless pork ribs just because that's what I happened to have on hand. It was simple and tasty. My family loved it!

I am the author of the recipe and to answer Nancy878's question about which size of velveeta to use - you use 1/2 the box of the 2lb box - hope this helps :o)

This sounds good, but I wonder which size loaf of Velveeta to use, the one pound or two pound??

You just want to brown the pork chops and get them 3/4 of the way done, they will finish in the oven. Boiling the potatoes helps speed up coooking time in the oven. You want the cheese to brown a little on top and have everything meld together.
