This is a great appetizer or side for summer, quick and easy with only a few ingredients. I made two batches, one with regular olive oil and one with garlic olive oil. The garlic olive oil gave it a little more zing. Definitely use a pie tin, some of the juices from the tomatoes leaked out. Im thinking of trying it with feta cheese next.
