Perfect side dish when grilling burgers. My summertime favorite!

Very good and you can change out the cheese herb mixture as you like or to suit what you have on hand.

This is a great appetizer or side for summer, quick and easy with only a few ingredients. I made two batches, one with regular olive oil and one with garlic olive oil. The garlic olive oil gave it a little more zing. Definitely use a pie tin, some of the juices from the tomatoes leaked out. Im thinking of trying it with feta cheese next.
