As I had everything called for on hand, this was just a matter of opening a few cans and frying the Chorizo and plopping it into my Montel Williams slow cooker and pushing one button. I used all ingredients exactly but, my Chorizo is a Vegetarian Soy Chorizo, so this ended being much healthier for that vegetarian option. The end calories per serving, and for me...a serving is one level cup as trying to loose diabetes 2 and weight, thus for mine, is just 179 calories, 5 cholesterol, 41 carbs, and 6.5 fat. The carbs I am trying to stick to is 30 per meal and this is a bit high but on the rare

I think I will give this a go, but going to use pinto beans instead of the cannellni beans. Living in Texas we like our pinto beans.

We added double the meat too, but used mild italian sausage instead of chorizo. It was full of flavor and spice! Would make it again...very tasty!

Chorizo is very fatty and full of grease but the flavor is fantastic. . . . I found Trader Joe's Soy Chorizo gives the same flavor and spice without the grease. LOVE IT in this recipe!

I accidentally doubled the meat and used 15oz cans of beans and this was fantastic. When I make it again I will do it the same way. I think 1/2 lb. of meat wouldn't be enough. We loved it!
