This was very tasty and definitely a make-again. Only thing I did differently was to add a little sauteed onion and since I couldn't find frozen southwestern chicken strips I used the pre-cooked from the non-frozen but refrigerated section of the store. Great for a cold day especially.

It was easy to make and very good! I added corn to mine and black beans probably would have been good.

I make tortilla soup all the time, but have never made enchilada soup. This was soooo yummy. Both my hubby and I gobbled it up. The only modification that I made was to use cheddar cheese soup instead of shredded cheese, plus I added a can of corn. It was truly amazing. I have leftovers for dinner tonight, and I'm so excited for them!!

WONDERFUL RECIPE! I did add light red kiddney beans and more cheese. My family loved this. Great on a cool rainy evening!

This was a pretty good soup. Easy to make and tasted really good. I wasn't sure at first, because I don't like enchilada sauce, I think it's bland, but all the flavors came together for a great tasting soup! Will definitely make this again!

Delicious, hearty and simple! I used pre-cooked, shredded chicken instead of the fajita chicken strips and used hot enchilada sauce for an extra kick. So good! Can't wait to make it again!
