jar (28 oz) tomato pasta sauce

teaspoon Italian seasoning

can (12 oz) Pillsbury® Grands!® Jr. Golden Homestyle Buttermilk Biscuits

cup shredded mozzarella cheese (4 oz)
1/2
cup cottage cheese
1
tablespoon parsley flakes
1/2
teaspoon dried minced onion
1/2
teaspoon dried basil leaves
2
tablespoons grated Parmesan cheese

  • 1 Heat oven to 400°F. In 10-inch skillet, cook ground beef over medium-high heat, stirring frequently, until thoroughly cooked; drain. Stir in pasta sauce, garlic powder, Italian seasoning and pepper. Reduce heat; cover and simmer 10 minutes.
  • 2 Separate dough into 10 biscuits. Press or roll each into 4-inch round. In small bowl, mix mozzarella cheese, cottage cheese, parsley flakes, onion and basil until well blended. Place about 2 tablespoons cheese mixture on each biscuit round. Fold dough in half over filling; press edges with fork to seal.
  • 3 Into ungreased 13x9-inch (3-quart) glass baking dish, pour hot beef mixture. Arrange filled biscuits on top. Sprinkle with Parmesan cheese.
  • 4 Bake 15 to 18 minutes or until biscuits are golden brown.

I, too, had to tweak this recipe for my picky eater husband. We also baked the biscuit/cheese part on a cookie sheet first, but instead of folding them in half we used two biscuits per pocket (one top and one bottom). Next time we'll just bake the pockets after the meat mixture has cooked and serve them alongside the dish so that the biscuit pockets stay crispy. Also, we used ricotta instead of cottage cheese. This is a really delicious dish so if you're willing to take a little time and effort your family should thank you.

This is very good, my picky eater boyfriend really liked it. Working off of some other suggestions I modified the biscuit portion by putting them on a cookie sheet and baking them for 6 minutes so they could form a crust on the outside. I used ricotta instead of cottage cheese which worked out nicely in the filling. After baking the bicuits I topped the meat mixture, covered with foil and baked as directed, uncovering and sprinkling with parmesan and returning to the oven to finish for the last ten minutes. A little more work but worth it.

The underneath was doughy when the top was done so we flipped them and baked for about 10 more minutes. I would suggest baking the bisquit/cheese pouches separate if you want it to look like the picture. Other than that these were delish! A real kid pleaser and the hubby liked it too.

This meal did not cook well. The biscuit was hard to cook on the bottom because of resting on top of the meat. It looked great when I took it out of the oven but the bottom remained dough like. I had to take them off the top of the casserole and lay them upside down on a baking pan for 10 minutes to finish cooking properly. Then trying to get the biscuits off the pan with out falling apart was difficult so my dinner looked nothing like this picture. Taste was descent, not worth the trouble though.
