I used Chipotle chili powder which added extra heat and delicious flavor. Also, definitely needed to cook the tortillas in a bit of oil before filling (the first time I tried it without cooking them, the tortillas fell apart. My husband and 9-yr old son loved these.

I love this recipe! Very easy to fix, in fact I doubled the recipe and froze some. The leftovers were even better, the flavors really seemed to heighten. The tortillas are easier to roll then they have been lightly fried in hot oil then placed between paper towels to drain.

This was delicious and easy...I prepared the dish and my husband baked it later so that when I walked in the door later in the day...I had great enchiladas.

This recipe is very easy and sounded like a great quick meal for my husband and I. Although it was VERY easy, it lacks in flavor! The recipe could use something else added but I don't know what that would be...different spices other than chili pepper would probably help. I probably won't be making this recipe again
