Cheese- and nut-studded muffins get the morning off to a nutritious start. They're also a nice change of pace from ordinary bread for sandwiches - try PB&J or cream cheese with jelly.

Ingredients

  • 1 (14-oz.) pkg. banana quick bread & muffin mix
  • 2/3 cup milk
  • 3 tablespoons oil
  • 2 eggs
  • 3 oz. (3/4 cup) shredded Cheddar cheese
  • 1/2 cup chopped walnuts

Steps

    Heat oven to 400°F. Line 12 muffin cups with paper baking cups or spray with nonstick cooking spray.

    In medium bowl, combine quick bread mix, milk, oil and eggs; stir 50 to 75 strokes with spoon until mix is moistened. Stir in cheese and walnuts. Fill paper-lined muffin cups 3/4 full.

    Bake at 400°F. for 19 to 22 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan. Serve warm.
