Cashew Chicken Wraps

Ingredients

  • 2 cups chopped cooked chicken
  • 1/2 cup cashew pieces
  • 1/2 cup sliced celery
  • 2 tablespoons sliced green onions
  • 1/3 cup purchased honey-mustard salad dressing
  • 4 (7 or 8-inch) flour tortillas
  • 1 cup fresh alfalfa sprouts
  • 8 small slices tomato

    In large bowl, combine chicken, cashew pieces, celery, onions and salad dressing; mix well.

    Spoon mixture evenly onto tortillas; spread to within 1 inch of edges. Top each evenly with sprouts and tomato slices. Roll up each tortilla.

  • Rich and buttery, cashews are rounded, kidney-shaped nuts that grow out of the bottom of the cashew apple. Cashews are sold whole or in pieces. Store them in an airtight container.
  • Try wrapping this delicious cashew-chicken filling in spinach or pesto tortillas. Not only will these tortillas add a splash of color, they’ll give the wraps an extra bit of flavor.
  • To make Cashew Chicken Bites for appetizers or snacks, omit the tomato slices and cut the wraps into 1-inch pieces.
