Cashew Chicken Sandwich Loaf

Layers of bread and chicken salad with a cheesy topping make a pretty loaf that's a good choice for a spring luncheon buffet.

Ingredients

LOAF

(1-lb.) unsliced loaf whole wheat or white sandwich bread, crusts removed*
1/2
cup margarine or butter, softened

FILLING

2 1/2
cups finely chopped cooked chicken
1/2
cup finely chopped celery
2
tablespoons finely chopped onion
1/2
cup chopped cashews
1/2
cup mayonnaise or salad dressing
1/4
teaspoon salt
1/8
teaspoon pepper

TOPPING

(8-oz.) pkg. cream cheese, softened
1/2
cup half-and-half

  • 1 Cut loaf lengthwise into 4 slices. Spread 3 slices with margarine. In small bowl, combine all filling ingredients; mix well. Spread 1/3 of filling over margarine on each slice of bread. Stack slices on serving plate, placing plain slice on top.
  • 2 In large bowl, combine cream cheese and half-and-half; mix well. Spread over sides and top of loaf. Cover carefully with plastic wrap; refrigerate at least 2 hours.
  • 3 Just before serving, garnish with chopped parsley and cashews, if desired. Store in refrigerator.

* Sandwich loaf can be made with alternating white and whole wheat slices; use remaining slices for a second sandwich loaf or other party sandwiches.

To lower the fat content of recipes calling for cream cheese, look for reduced-fat versions in the supermarket's dairy section. Neufchâtel, known as the "cream cheese" of Switzerland and France, is also a good alternative. It's a soft, white unripened cheese that's good in desserts, dips, sauces and spreads. Though sometimes considered a lighter form of cream cheese, Neufchâtel is a variety all its own. American Neufchâtel contains less fat and more moisture than the European type. Find Neufchâtel in the dairy section along with the cream cheese.
