Caribbean Turkey Salad

Ingredients

Dressing

(8-oz.) container low-fat lemon yogurt

tablespoon frozen orange juice concentrate, thawed

teaspoon cinnamon

Salad

oz. cooked turkey breast, cut into strips (about 2 cups)

cups strawberries, halved
1
cup cubed cantaloupe
1
banana, sliced

(8-oz.) cans pineapple chunks, drained
Lettuce leaves

cup coconut, if desired
  • 1 In small bowl, combine all dressing ingredients; mix well.
  • 2 In large bowl, combine turkey, strawberries, cantaloupe, banana and pineapple; toss gently.
  • 3 Line 4 individual salad plates or large platter with lettuce. Spoon turkey mixture onto lettuce. Spoon dressing over salads. Sprinkle with coconut.
