Dressing

(8-oz.) container low-fat lemon yogurt
1
tablespoon frozen orange juice concentrate, thawed
1/2
teaspoon cinnamon

Salad

8
oz. cooked turkey breast, cut into strips (about 2 cups)
2
cups strawberries, halved
1
cup cubed cantaloupe
1
banana, sliced
2
(8-oz.) cans pineapple chunks, drained
Lettuce leaves
1/4
cup coconut, if desired

Directions

  1. 1 In small bowl, combine all dressing ingredients; mix well.
  2. 2 In large bowl, combine turkey, strawberries, cantaloupe, banana and pineapple; toss gently.
  3. 3 Line 4 individual salad plates or large platter with lettuce. Spoon turkey mixture onto lettuce. Spoon dressing over salads. Sprinkle with coconut.
