Ingredients

cups flaked coconut

cups water
2
green onions, thinly sliced

garlic clove, minced
1/2
to 1 teaspoon dried thyme leaves
1/2
teaspoon salt
1/2
teaspoon sugar

cups uncooked instant rice
1
(15.5-oz.) can kidney beans, drained, rinsed

Directions

  1. 1 In medium saucepan, combine coconut and water. Bring to a boil; boil 1 minute. Place strainer over 2-cup measuring cup. Pour coconut mixture into strainer; press out all liquid. Measure liquid and add water to make 2 cups. Discard coconut.
  2. 2 Return coconut liquid to same saucepan. Stir in onions, garlic, thyme,salt and sugar. Bring to a boil. Add rice; cook 1 to 2 minutes or untilliquid is absorbed.
  3. 3 Add beans; cook until thoroughly heated.
